Recipe for Egg in a hole

It is really embarrassing but recently I have been so busy that I didn’t even have the time to go to the supermarket. When I opened my fridge on Saturday morning, I noticed that I had nothing but some toast, butter, eggs, pea sprouts and tomatoes. Therefore, I decided to go for some really simple and easy breakfast and made Egg In A Hole. I love how the name is so literal.

Carrot Cake with White Chocolate Cream Cheese Frosting
Soft, moist carrot cake with a rich, creamy and slightly tart frosting.
Ingredients for the sponge
  1. 250ml canola oil
  2. 180g soft brown sugar
  3. 80g muscovado sugar
  4. Zest of 1/2 orange
  5. 4 medium or 3 large eggs
  6. 150g all-purpose flour
  7. 100g ground almonds
  8. 3 1/2 teaspoons baking powder
  9. 250g grated carrots
  10. 50g raisins (optional: soaked in some rum)
  11. 100g roughly chopped pistachios
  12. 1 teaspoon cinnamon
  1. 1x 10“ round baking pan
  2. or
  3. 2x 7“ round baking pans
Ingredients for the frosting
  1. 100g white chocolate
  2. 250g cream cheese (room temperature)
  3. 50g butter (room temperature)
  4. 1 teaspoon vanilla extract
  5. 220g icing sugar

For the cake
  1. Preheat the oven to 180°C or 356°F.
  2. Whisk together oil, sugar and orange zest.
  3. In a separate bowl, sift flour and baking powder, then add the ground almonds and cinnamon. Combine.
  4. Add the eggs to the oil-sugar-mixture, then slowly pour in the flour-mixture.
  5. Use a wooden spoon to add chopped pistachios, raisins and grated carrots.
  6. Line the bottom of your cake pan(s) with parchment and grease the sides.
  7. Fill the cake batter inside the cake pan(s) and place on the medium rack of your oven.
  8. Bake for 35 minutes (7“ pans) or 45 minutes (10“ pans).
  9. Check the cakes after 20 minutes of baking and cover when needed so that the top won't burn.
  10. Remove from the oven.
  11. Let cake cool in the pan for about 10 minutes, then flip it onto a cooling rack.
For the frosting
  1. Melt white chocolate over a bain marie. Set aside and let it cool to room temperature.
  2. Using an electric mixer, beat the butter until it is smooth. Add the cream cheese and blend the mixture.
  3. Add melted chocolate and vanilla.
  4. Add sugar gradually until frosting is light and fluffy.

The eggs I had in my fridge were organic eggs by the black boned chicken which are very tiny, therefore I had to use 2 eggs to fill one hole. As I still had some pea sprouts and tomatoes in my fridge, I decided to serve the egg in the hole with a side salad with a simple dressing made from tahini, vinegar, sugar and salt.

I think this dish tastes pretty amazing and it really doesn’t get easier than this. Give it a try and let me know what you think.
